You make a protein cappuccino by warming your milk to around 60°C (140°F), stirring a scoop of unflavored whey protein into the warm milk, frothing it until dissolved and foamy, then adding a shot of espresso or pouring the frothed milk over your coffee. No blender. No clumping. No chalky aftertaste. It takes 90 seconds and you get 25 grams of protein in something that tastes like coffee, not a protein shake.
I started doing this in 2024 because I was tired of drinking shakes. The blender. The cleanup. The weird sweetener aftertaste. I wanted protein but I didn't want to feel like I was "working out" at 7am.
This is the version I landed on after ruining about a dozen cappuccinos.

Why unflavored whey is the only one that works
Flavored protein powder will ruin this.
Vanilla whey tastes like vanilla coffee, which is fine if you're into that. Chocolate whey tastes like mocha, which some people love.
But here's the problem: most flavored whey is loaded with gums (xanthan, guar) and artificial sweeteners (sucralose, acesulfame-K). When you heat them, they break down. Your cappuccino gets slimy or weirdly bitter.
Unflavored whey protein concentrate is just dried milk protein. One ingredient. It dissolves clean in warm milk when frothed because there's nothing in it that degrades under heat.

The actual recipe (step by step)
What you need:
- 1 shot espresso (about 30ml)
- 1 scoop (25-30g) unflavored whey protein concentrate
- 120-150ml milk of choice
- Milk frother or steam wand
How to make it:
- Pull your espresso shot into a cappuccino cup.
- Heat your milk to 60-65°C (140-150°F). Not boiling. Just warm.
- Add the whey powder directly to the warm milk.
- Froth hard for 15-20 seconds with your milk frother or steam wand. The whey will dissolve completely into the frothing milk and create a smooth, creamy foam.
- Pour the frothed milk over the espresso. The foam will sit on top like a normal cappuccino.
- Drink it immediately while it's hot.
That's it.
No blender. No shaker bottle. No weird separation.
The whey dissolves in the warm milk during frothing because the temperature is low enough to prevent clumping and the agitation helps it blend smoothly. You get a normal-looking cappuccino with 25g of protein.
What milk works best
I've tried this with every milk I could find in Porto.

Whole milk is the best if you're not avoiding dairy. The fat helps the whey blend in and the foam is perfect.
Oat milk (the barista blends like Oatly Barista) is the best non-dairy option. It froths almost as well as dairy and the slight sweetness balances the espresso.
Almond milk works but you won't get much foam. Fine if you don't care about the foam.
Soy milk has the protein but the taste is off. Coconut milk is too thin and the flavor dominates everything.
Why the warm milk step matters
If you add whey to hot liquid (above 65-70°C), it clumps.
Whey is a dairy protein. When you add it to liquid that's too hot, the proteins coagulate before they dissolve. You get little rubbery balls floating in your cup.
Warm milk (60-65°C) is below the clumping temperature. When you froth the whey into warm milk, the proteins dissolve smoothly and stay dissolved when you add the espresso.
This is why the method matters. Whey into hot liquid = clumps. Whey into warm milk, frothed, then coffee = smooth.
The timing trick (so it doesn't separate)
Protein cappuccinos separate if you let them sit.
The whey is heavier than the milk. If you make it and leave it on your desk for 10 minutes, you'll see a layer of liquid at the bottom and foam at the top.
The fix: drink it right away.
I make mine, take it to my desk, and finish it in 5-6 minutes while it's still hot. No separation. No weird texture. It's a cappuccino that happens to have 25g of protein, not a protein drink pretending to be coffee.
If you need to make it ahead, keep it in a thermos and shake it before you drink. Not ideal but it works.
What I use (and why)

The numbers (if you care)
One protein cappuccino made with whole milk:
- Calories: ~180 (120 from the whey, 60 from 150ml whole milk)
- Protein: ~30g (24g from the whey, 5g from the milk)
- Carbs: ~8g (1g from the whey, 7g from the milk)
- Fat: ~5g (1g from the whey, 4g from the milk)
- Sugar: ~7g (all from the lactose in the milk, none added)
If you use unsweetened oat or almond milk, drop the calories to ~140 and the protein to ~25g.
This is what I drink most mornings. It's not a meal replacement but it's a solid 30g of protein before 8am without making a shake or cooking eggs.
What people get wrong
Three mistakes I see people make:
Using flavored whey. Vanilla protein powder in coffee tastes like burnt vanilla. Chocolate tastes like bad mocha. The gums and sweeteners also make it slimy or bitter when heated. Just use unflavored.
Adding whey to hot liquid. Whether it's espresso, coffee, or milk that's too hot, whey clumps above 65-70°C. Always add it to warm milk first (well under 65°C), froth until dissolved, then add the coffee.
Not frothing hard enough. You have to froth aggressively for 15-20 seconds. If you just swirl it gently, it'll clump at the bottom.
Fix those three things and it works every time.
Why I started doing this
I used to make protein shakes every morning. Scoop of whey, frozen berries, almond milk, spinach if I was feeling ambitious. Blend for 30 seconds. Drink it in the car.
It was fine. But I got tired of it.
The blender was loud at 6:30am. The cleanup was annoying. And honestly, I just wanted coffee.
So I started experimenting. First attempt: I stirred whey into black coffee. It clumped. Tasted like chalk.
Second attempt: I added it to a latte. Better, but it separated after a few minutes.
Third attempt: I stirred it into warm milk, frothed it, then added the espresso. That worked.
I've been making it this way since early 2024. I've had maybe 300 of these. It's the only way I get protein in the morning now without feeling like I'm "doing fitness."
If you don't have an espresso machine
You can still make this.
Use a Moka pot, an Aeropress, or just very strong black coffee.
Here's the modified version:
- Make 30-50ml of strong black coffee (any method).
- Heat your milk to 60-65°C (140-150°F). Warm, not hot.
- Stir the whey powder into the warm milk.
- Froth hard for 15-20 seconds with a handheld frother or steam wand. The whey will dissolve completely.
- Pour the frothed milk over the coffee.
It won't have the crema of a real espresso, but it tastes the same and the whey dissolves just fine.
The only rule that matters
Unflavored whey. Warm milk first. Froth until dissolved, then add coffee.
That's it. Everything else is preference.
