- 240gCottage cheese (strained)

- 1 lemonLemon zest

Preheat oven to 180°C. Line a muffin tin with 6 cases.

Mix oat flour, almond flour, whey protein, baking soda, cinnamon, and salt.

Blend cottage cheese until smooth, then whisk in eggs, agave, lemon zest, lemon juice, and vanilla.

Fold wet into dry — don't overmix. Gently fold in blueberries.

Divide evenly into muffin cases.

Bake 20-22 min until golden and a toothpick comes out clean.
