- 200gCottage cheese (strained)

Preheat oven to 180°C. Grease three ramekins.

Mix oat flour, whey protein, baking soda, cacao, and salt in a bowl.

Melt dark chocolate over a bain-marie or microwave in 15-second bursts.

Blend cottage cheese until smooth, then whisk in eggs, agave, espresso, lemon zest, and vanilla.

Combine wet and dry mixtures, fold in the melted chocolate (don't overmix).

Divide batter into ramekins. Bake 12-15 min — centers should still jiggle.
